Healthy Chilled Pea Soup

Went to 11 Madison Ave for dinner a while back, totally in love with their dishes.  BF got me a recipe book that I think I may share few (easy) ones (that I can handle...) ^^

This Garden pea chilled soup was one of the appetizers, not only it tastes good and fresh, it's also  very healthy and easy to make.



Ingredients:
1/2 cup chopped scallions, green parts only; 4 cups shelled English peas; 1 cup buttermilk; 4 tablespoons olive oil; 2 tablespoons salt; 10 leaves mint

- Boil a large pot of salted water, cook the scallions for about 30 sec.  
- Use a slotted spoon transfer them to a bowl of ice water and drain.  
- Add the peas to the boiling water and cook for 3~4 min, then transfer to a bowl of ice water and drain.  
- In a blender, puree the scallions, peas, buttermilk, olive oil, salt and mint leaves, add 6 cups water.  Blend on high until smooth and then pass through a chinois.  
- Chill over ice and then refrigerate.  
- To serve, garnish the soup with Buttermilk Snow.
